Stuffed Mushrooms

  • 16 to 20 large, fresh mushrooms
  • 1 small zucchini, shredded (3/4 c.)
  • 2 Tbsp. onion, chopped
  • 1 Tbsp. water
  • 1/3 c. Parmesan cheese

Directions

    Remove stems from mushrooms; set caps aside.

    Chop stems. Combine stems, zucchini, onion and water.

    Cook, stirring constantly over medium heat until vegetables are tender.

    Drain. Stir in cheese.

    Stuff caps with mixture.

    Place in 13 x 9-inch baking dish.

    Bake at 375° for 8 to 10 minutes or until caps are tender.

    Serve warm.
