Stuffed Mushrooms

  • 12 large mushrooms, remove and chop stems
  • 4 Tbsp. butter
  • 4 Tbsp. finely chopped onion
  • chopped stems
  • 1/4 c. dry bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 1/4 c. grated Swiss cheese
  • 4 Tbsp. minced fresh parsley
  • 1/2 tsp. tarragon (or garlic)
  • 4 Tbsp. cream to moisten

Directions

    Saute onions and stems in butter.

    Add remaining ingredients. Fill cups of mushrooms with the mixture and top them with melted butter.

    Place in 375° oven for 15 to 20 minutes.

    Serve hot.
