Stuffed Mushrooms

- 1 lb. large mushrooms (about 16)
- 1 c. hot water
- 6 Tbsp. melted margarine
- 1/2 finely chopped small green pepper
- 1/2 finely chopped small red pepper
- 2 c. ready-made stuffing mix (such as Stove Top)
Directions

1Stir the stuffing mix and water in a mixing bowl.

2Remove the stems from the mushrooms.

3Chop stems.

4Cook the mushroom caps in 3 tablespoons of margarine, lightly browning in a skillet.

5Remove and place in a shallow baking dish.

6In the skillet, stir and cook the mushroom stems and peppers until tender.

7Stir into the stuffing in the bowl.
-
8Spoon the stuffing mixture into the mushroom caps.

9Drip the tops with the remaining margarine.
-
10Heat under the broiler for five minutes.
