Stuffed Mushrooms

  • 1 lb. large mushrooms (about 16)
  • 1 c. hot water
  • 6 Tbsp. melted margarine
  • 1/2 finely chopped small green pepper
  • 1/2 finely chopped small red pepper
  • 2 c. ready-made stuffing mix (such as Stove Top)

Directions

    Stir the stuffing mix and water in a mixing bowl.

    Remove the stems from the mushrooms.
  3. 3
    Chop stems.
  4. 4
    Cook the mushroom caps in 3 tablespoons of margarine, lightly browning in a skillet.

    Remove and place in a shallow baking dish.
  6. 6
    In the skillet, stir and cook the mushroom stems and peppers until tender.

    Stir into the stuffing in the bowl.

    Spoon the stuffing mixture into the mushroom caps.

    Drip the tops with the remaining margarine.

    Heat under the broiler for five minutes.
