- 12 large fresh mushrooms (24 oz.)
- 2 Tbsp. butter
- 1 medium onion, finely chopped
- 2 oz. pepperoni, diced (1/2 c.)
- 1/4 c. finely chopped green peppers
- 1 small clove garlic, crushed
- 1/2 c. finely crushed rich crackers (12)
- 3 Tbsp. Parmesan cheese
- 1 Tbsp. parsley
- 1/2 tsp. seasoned salt
- 1/4 tsp. oregano
- 1/3 c. chicken broth
- dash of pepper
Directions

1Wash mushrooms and remove stems.

2Drain caps and chop stems and reserve.

3Melt butter in skillet.

4Add onion, pepperoni, green peppers, garlic and stems.

5Cook until vegetables are tender.

6Add cracker crumbs, cheese, parsley, seasoned salt, oregano and pepper.

7Mix well.

8Stir in chicken broth.

9Spoon stuffing into caps.

10Place in shallow baking pan with 1/4-inch water.

11Bake, uncovered, at 325° for about 25 minutes.
