Stuffed Mushrooms

  • 10 oz. pkg. fresh mushrooms (not too small!)
  • 6 oz. Ricotta
  • 1/2 small onion, chopped
  • parsley
  • garlic powder
  • salt and pepper
  • 1 egg
  • seasoned bread crumbs
  • 2 Tbsp. butter or margarine
  • 1 stalk celery, chopped

Directions

    Wash and pat dry mushrooms.

    Remove stems and save.
  3. 3
    Put caps in baking dish, open side up.

    Cut ends off stems, discard.
  5. 5
    Dice stems fine.

    In bowl combine diced stems, onion, celery, Ricotta and egg; mix well.

    Soften or slightly melt butter.

    Add and mix; season.

    Add bread crumbs until mixture is not watery, firm, but not crumbly.

    Fill mushroom caps, piled high.

    Bake at 400° for 15 to 20 minutes or microwave 7 to 10 minutes. Garnish with parsley.
