- 1 cup green peas, frozen or fresh
- 1/2 small red onion, finely chopped
- 60g block PHILADELPHIA Cream Cheese, softened
- 1/4 cup fresh breadcrumbs
- 1 tablespoon mint leaves, torn
- salt and pepper, to taste

- 20g butter, melted
- 2 clove garlic, halved
Directions

1Cook peas in boiling water for 5 minutes or until just tender.

2Transfer to a food processor with onion, Philly*, breadcrumbs and mint leaves.

3Process until peas are still lumpy.

4Season to taste.

5Gently loosen chicken skin and push mushy pea mixture under skin.

6Melt butter with garlic and brush over chicken.

7Bake at 180C for 25-30 minutes or until chicken is well browned and cooked.
