Stuffed Mushy Pea Chicken

  • 1 cup green peas, frozen or fresh
  • 1/2 small red onion, finely chopped
  • 60g block PHILADELPHIA Cream Cheese, softened
  • 1/4 cup fresh breadcrumbs
  • 1 tablespoon mint leaves, torn
  • salt and pepper, to taste

  • 20g butter, melted
  • 2 clove garlic, halved

Directions

    Cook peas in boiling water for 5 minutes or until just tender.

    Transfer to a food processor with onion, Philly*, breadcrumbs and mint leaves.

    Process until peas are still lumpy.

    Season to taste.

    Gently loosen chicken skin and push mushy pea mixture under skin.

    Melt butter with garlic and brush over chicken.

    Bake at 180C for 25-30 minutes or until chicken is well browned and cooked.
