Stuffed New Potatoes

  • 20 new potatoes, small ones about silver dollar size
  • 3/4 c. cheddar cheese, grated
  • 1 c. cream cheese
  • 1/2 c. sour cream
  • 3 Tbsp. freshly chopped chives
  • 1/4 tsp. salt and pepper

Directions

    Boil potatoes on a medium heat till soft and cool in fridge . Combine the rest of the ingredients together.

    Cut cooled potatoes in half.

    With a melon scoop or a small spoon scoop out a bit of potato and discard.
  4. 4
    Spoon some of the mixture into the potato, about a Tbsp.
  5. 5
    Bake 375° 15-20 minutes.

    Serve immediately.

    If any of the mixture left save in the fridge.
  8. 8
    It works great on top of a baked potato!
