Stuffed New Potatoes

- 20 new potatoes, small ones about silver dollar size
- 3/4 c. cheddar cheese, grated
- 1 c. cream cheese
- 1/2 c. sour cream
- 3 Tbsp. freshly chopped chives
- 1/4 tsp. salt and pepper
Directions

1Boil potatoes on a medium heat till soft and cool in fridge . Combine the rest of the ingredients together.

2Cut cooled potatoes in half.

3With a melon scoop or a small spoon scoop out a bit of potato and discard.

4Spoon some of the mixture into the potato, about a Tbsp.

5Bake 375° 15-20 minutes.

6Serve immediately.

7If any of the mixture left save in the fridge.

8It works great on top of a baked potato!
