- 6 large Bermuda onions
- 2 Tbsp. margarine
- 1 lb. ground beef
- 1 slice bacon
- 2 Tbsp. chopped celery
- 2 Tbsp. chopped parsley
- 1/4 c. evaporated milk
- 2/3 c. bread crumbs
- 1 c. stock
- salt and pepper
Directions

1Parboil onions for 10 minutes; drain and cool.

2Saute meat and chopped bacon in margarine; do not brown.

3Add parsley, celery, milk and crumbs, plus 1/3 of stock.

4Now, peel and scoop out centers of onions.

5Stuff with meat mix and place in baking dish. Pour in rest of stock.

6Bake at 400° for 40 minutes.

7Baste occasionally.

8Serves 4 to 6.
