Stuffed Peanut Yams

- 4 medium size yams
- 2/3 c. milk
- 1 tsp. cinnamon
- 1/4 c. peanut butter
- 1 tsp. nutmeg
- 1/3 c. chopped peanuts (garnish)
Directions

1Heat oven to 425°.

2On baking sheet, arrange yams.

3Bake for about 1 hour, or until fork-tender.

4When cool enough to handle, halve lengthwise and scoop out yams, leaving shell intact.

5In large bowl, mash yams.

6Add milk, peanut butter, cinnamon and nutmeg.

7Beat until fluffy.

8Spoon into shells; sprinkle with nuts.

9Bake until light brown, about 10 minutes.

10Makes 8 servings.
