Stuffed Pepper Pie

  • 2 qt. water
  • 3 medium green bell peppers, halved and seeded
  • 1/4 c. finely chopped onion
  • 1 c. water
  • 2 Tbsp. margarine or butter
  • 1 1/3 c. Hungry Jack instant potato flakes
  • 1/4 c. milk
  • 1 egg, slightly beaten
  • 1 lb. cooked bulk pork sausage, cooked and drained
  • 1 tomato, cut in wedges
  • 4 oz. shredded Mozzarella cheese

Directions

    In large saucepan, bring 2 quarts water to rolling boil.

    Place peppers in boiling water and cook for 15 minutes.

    Drain; arrange, cut side up, around bottom of ungreased pie pan.

    Heat oven to 350°.

    In same saucepan, combine 1 cup water and margarine.

    Heat to boiling.

    Remove from heat; stir in potato flakes, milk and egg. Mix well.

    Stir in sausage; spoon into pepper lined pan.

    Arrange tomato wedges on top.

    Sprinkle with cheese and bake at 350° for 15 to 20 minutes.
