Stuffed Pepper Pie

Ingredients
- 2 qt. water
- 3 medium green bell peppers, halved and seeded
- 1/4 c. finely chopped onion
- 1 c. water
- 2 Tbsp. margarine or butter
- 1 1/3 c. Hungry Jack instant potato flakes
- 1/4 c. milk
- 1 egg, slightly beaten
- 1 lb. cooked bulk pork sausage, cooked and drained
- 1 tomato, cut in wedges
- 4 oz. shredded Mozzarella cheese
Directions

1In large saucepan, bring 2 quarts water to rolling boil.

2Place peppers in boiling water and cook for 15 minutes.

3Drain; arrange, cut side up, around bottom of ungreased pie pan.

4Heat oven to 350°.

5In same saucepan, combine 1 cup water and margarine.

6Heat to boiling.

7Remove from heat; stir in potato flakes, milk and egg. Mix well.

8Stir in sausage; spoon into pepper lined pan.

9Arrange tomato wedges on top.

10Sprinkle with cheese and bake at 350° for 15 to 20 minutes.
