Stuffed Pepper Wedges

- 3 tsp. olive oil
- 1 large sweet red pepper
- 1 large sweet green pepper
- 1 large sweet yellow pepper
- 1 large tomato, seeded and diced
- 1/4 c. black olives
- 2 cloves garlic, finely chopped
- 3 Tbsp. Parmesan cheese
- 1 Tbsp. chopped parsley
Directions

1Preheat oven to 350°.

2Grease 13 x 9 x 2-inch baking dish with 1 teaspoon olive oil.

3Halve, core and seed peppers.

4Cut each half into 3 lengthwise wedges. Combine tomato, olives, garlic, 2 tablespoons Parmesan cheese and parsley in a small bowl.

5Divide mixture among pepper wedges.

6Place pepper wedges in prepared baking dish.

7Drizzle with remaining 2 teaspoons olive oil.

8Bake peppers in preheated oven until tender, about 30 minutes. Sprinkle with remaining (1 tablespoon) Parmesan cheese.

9Bake additional 5 minutes.

10Serve immediately or at room temperature. Makes six servings.
