- 8 oz. ground beef
- 1 onion, chopped
- 6 medium tomatoes, chopped
- 8 large green peppers
- 3 c. grated Monterey Jack cheese
- 3 c. kidney beans
- 2 Tbsp. parsley, chopped
- 1 clove garlic, minced
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

1Brown beef and drain.

2Saute onion and tomatoes; drain. Parboil peppers in salted water for 3 minutes; drain.

3Mix beef, tomato mixture and remaining ingredients in bowl.

4Spoon into green peppers.

5Arrange in baking pan.

6Bake, covered, at 350° for 30 minutes.
