Stuffed Peppers

Ingredients

  • 2 lb. chopped meat
  • 1/2 medium chopped onion
  • 1 c. cooked rice
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 6 nice size and shape peppers
  • 2 (10 3/4 oz.) cans tomato soup

Directions

    Mix first 5 ingredients with a fork until well mixed.

    Cut tops off peppers and remove seeds.

    Fill with chopped meat mixture (do not pack into peppers).

    Place side by side in large Dutch oven pot.

    Mix the 2 cans of soup together.

    Pour tomato soup over peppers.

    Bring to a boil; reduce heat.

    Cover and simmer 1 hour.
