Stuffed Peppers

Ingredients

  • 4 large green peppers
  • 10 c. boiling water
  • 1 lb. ground beef (lean)
  • 1/4 c. chopped celery
  • 1/2 c. soft bread crumbs
  • 1 1/4 c. crushed potato chips
  • 2 eggs, beaten
  • 1/4 tsp. catsup
  • 1/4 tsp. poultry seasoning
  • paprika
  • 3/4 c. buttermilk

Directions

    Slice tops off peppers; remove seeds and rinse.

    Place peppers in container and cover with boiling water and let stand 10 minutes.

    Drain peppers and sprinkle cavities with salt.

    Mix ground beef, 1 cup crushed potato chips, buttermilk, eggs, catsup and poultry seasoning.

    Fill peppers with mixture.

    Place filled peppers in baking dish.

    Sprinkle with remaining chips and paprika.

    Bake at 375° for 30 minutes.
