  • 1 lb. ground beef
  • 2 c. chopped fresh tomatoes
  • 1 clove garlic, chopped
  • 1/2 tsp. chili powder
  • salt and pepper to taste
  • 2 Tbsp. chopped green onion
  • 3/4 c. cooked dry rice
  • 5 to 6 peppers, cleaned

Directions

    Cook peppers 7 to 10 minutes in boiling salted water.

    Sprinkle salt in skillet; brown ground beef.

    Add garlic and tomatoes and cook 5 minutes.

    Take off stove and add chili powder, pepper, onion and rice.

    Fill peppers; top with cheese.

    Bake 35 minutes at 375°. Freezes beautifully.
