Stuffed Peppers

Ingredients

  • 6 green peppers
  • 3 Tbsp. chopped onion
  • 2 Tbsp. butter
  • 1 lb. ground chuck
  • 1/2 c. cooked rice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 (8 oz.) cans tomato sauce
  • 1/4 c. sherry
  • 1/2 c. sour cream
  • 1/4 lb. sharp Cheddar cheese, grated or shredded

Directions

    Remove stem ends and seeds from peppers.

    Saute onion in butter; add meat and brown.

    Mix in rice, salt and pepper and one can tomato sauce.

    Fill peppers and arrange in baking dish. Combine sour cream, the remaining can of tomato sauce and the sherry and pour over peppers.

    Bake in preheated 350° oven for 45 to 60 minutes.

    Sprinkle with cheese and bake another 15 minutes. Makes 4 to 6 servings.
