Stuffed Peppers

  • 5 or 6 medium green peppers
  • 3/4 c. brown rice (uncooked)
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • 1/2 tsp. salt
  • 1/2 tsp. instant beef broth
  • pepper to taste

Directions

    Remove tops and seed from peppers.

    In large kettle, bring water to boil.

    Cook peppers five minutes.

    Remove and drain. Cook rice according to instructions on package.

    Set aside.

    In a skillet brown ground beef and onions.

    Drain.

    Add tomato sauce, herbs, salt and pepper.

    Cook 5 minutes.

    Stir in rice.

    Stuff cleaned peppers with the rice mixture.

    Place upright in a shallow pan.

    Mix beef broth in 1/2 cup water.

    Add to pan.

    Bake at 375° for 15 minutes.
