  • 6 large green or red or yellow peppers
  • 1 - 10 oz. pkg. frozen spinach, chopped and drained
  • 1 - 16 oz. container plain yogurt or sour cream
  • 1/2 c. parmesan cheese
  • 1/2 c. bread crumbs
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. oregano
  • 1/4 tsp. garlic powder
  • 4 eggs

Directions

    Cut peppers lengthwise and remove seeds.

    Mix remaining ingredients and fill peppers.

    Bake at 350° for 30 minutes.

    Turn and bake another 30 minutes.

    These freeze well.
