Stuffed Peppers

Ingredients
- 4 large green peppers
- 1/2 lb. ground beef
- 1 c. bread crumbs
- salt and pepper to taste
- 1 Tbsp. chopped onion
- 1 c. cooked rice
- 1 can tomato soup (10 3/4 oz.)
Directions

1Preheat oven to 350°.

2Remove tops and seeds from peppers. Blanch in boiling water for 4 minutes.

3Drain; set aside.

4Mix together ground beef, bread crumbs, onion and rice.

5Season with salt and pepper.

6Mix in 1/2 can of soup.

7Stuff peppers with mixture.

8Stand in glass dish for baking.

9Mix remaining soup with 1/2 soup can of water.

10Pour over peppers in dish and cover.

11Bake for 45 minutes.

12Uncover and bake for 15 minutes more.
