Stuffed Peppers

- 1 lb. ground beef
- 1 c. chopped onion
- 1 clove garlic
- 1 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 c. tomato soup
- 1/2 lb. sharp Cheddar cheese
- 1 1/2 c. cooked rice
- 8 medium peppers
Directions

1Cook beef, onion and garlic until brown.

2Add seasonings and soup.

3Simmer 10 minutes.

4Add cheese.
-
5Cook slowly until cheese melts.

6Stir in rice.
-
7Cool.
-
8Cut peppers in half lengthwise. Remove seeds.

9Cook in boiling water 3 minutes.

10Drain and cool. Place peppers on baking sheet or shallow pan.

11Stuff with rice mixture.
