  • 3/4 c. uncooked rice
  • 4 red, green or yellow peppers
  • 1 tsp. cornstarch
  • 2 tsp. soy sauce
  • 1/2 tsp. sugar
  • 1/4 tsp. ground ginger
  • 2 (5 oz. each) cans chunk turkey or chicken
  • 1 can cream of chicken soup

Directions

    In a large bowl, combine rice and 3/4 cup water. Cover with plastic wrap with a section turned back to vent. Cook in microwave on High until water boils, about 2 minutes.

    Remove from oven and let stand, covered, about 15 minutes.
