  • 6 large bell peppers, scooped out
  • 1 (32 oz.) jar spaghetti sauce
  • 2 c. leftover meat loaf, crumbled
  • 1 1/2 c. leftover rice
  • 1/4 c. onion, chopped
  • 1/4 c. hot pepper, chopped
  • 3/4 c. Cheddar, shredded

Directions

    Boil bell peppers 3 minutes; drain.

    In saucepan, combine all ingredients, except cheese.

    Cook until heated thoroughly.

    Stuff peppers with mixture.

    Bake about 12 minutes at 375°.

    Top with cheese.

    Turn off oven and return peppers until cheese is melted.
