- 4 baking potatoes
- 3/4 c. plain low-fat yogurt
- 3/4 c. low-fat cottage cheese
- 1 small onion, finely chopped
- 1/4 c. fresh parsley
- 1/4 tsp. garlic powder
- pepper and paprika to taste
Directions

1Bake the potatoes until soft.

2Mix all other ingredients except paprika.

3Cut the potatoes in half lengthwise.

4Scrape most of the potato

5from the skins and add to the mixture. Beat.

6Spoon the mixture into the shells and sprinkle with paprika.

7Bake in a 350° oven for 20 minutes.
