- 1/3 c. low-fat cottage cheese
- 3 Tbsp. grated Parmesan cheese
- 1 Tbsp. lemon juice
- 1 Tbsp. hot Chinese mustard
- 2 c. chopped broccoli, steamed and drained
- freshly ground black pepper to taste
- 3 hot freshly baked potatoes, halved
- paprika
Directions

1Mix cottage cheese, Parmesan cheese, lemon juice and mustard until smooth.

2Stir in the broccoli and pepper.

3Set aside. Lightly break up the potato interior with a fork without breaking through the peel.

4Top each potato half with the broccoli-cheese mixture.

5Sprinkle with paprika.

6Serve hot.
