- 2 large baking potatoes
- 1/4 c. plain nonfat yogurt
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. skim milk
- 1/2 tsp. salt
- 1/4 tsp. paprika
- vegetable cooking spray
- 2 Tbsp. minced chives
- 1/8 tsp. garlic powder
- dash of pepper
Directions

1Wash potatoes and spray with cooking spray.

2Bake at 375° for 1 hour or until done.

3Let cool to touch.

4Cut potatoes in half lengthwise.

5Scoop out pulp, leaving a 1/4-inch shell.

6Set shells aside.

7Combine potato pulp, yogurt and next 6 ingredients in a medium bowl; mash until light and fluffy.

8Pipe or spoon mixture into shells.

9Place potatoes on an ungreased baking sheet. Sprinkle with paprika and bake, uncovered, for 10 minutes or until thoroughly heated.
