- 6 medium to large potatoes (2 to 3 lb.)
- 1 tsp. salt
- 1/2 c. margarine
- 1/2 tsp. pepper
- 1 Tbsp. sour cream
- 1/16 tsp. diet paprika
Directions

1Preheat oven to 400°.

2Bake potatoes until soft.

3Cut in half lengthwise.

4Take out centers, while hot, saving the skins.

5Put potato centers in mixing bowl.

6Add next four ingredients and mix at medium speed of electric mixer for three minutes, or mash by hand until smooth and fluffy.

7Put mixture in potato skins and sprinkle paprika lightly on the potatoes.

8Brown in oven for four minutes.
