Stuffed Potatoes

  • 6 medium to large potatoes (2 to 3 lb.)
  • 1 tsp. salt
  • 1/2 c. margarine
  • 1/2 tsp. pepper
  • 1 Tbsp. sour cream
  • 1/16 tsp. diet paprika

Directions

    Preheat oven to 400°.

    Bake potatoes until soft.

    Cut in half lengthwise.

    Take out centers, while hot, saving the skins.

    Put potato centers in mixing bowl.

    Add next four ingredients and mix at medium speed of electric mixer for three minutes, or mash by hand until smooth and fluffy.

    Put mixture in potato skins and sprinkle paprika lightly on the potatoes.

    Brown in oven for four minutes.
