Stuffed Potatoes

  • 2 1/4 pounds potatoes
  • 2 eggs
  • salt
  • vegetable oil
  • 9/16 pound ground pork chopped
  • 1 garlic clove chopped
  • 1 onion peeled and chopped
  • 1 green onion chopped
  • flour
  • ground black pepper

    Cook the potatoes in plenty of salted boiling water. Peel and mash with a fork.

    Add 1 egg and a pinch of salt.

    Heat some oil in a saucepan. Saute the onion and garlic. Add the pork meat and mix.

    Roll the mashed potatoes and slice into portions. With floured hands, shape one of the portions into a ball. Stretch until it is about 20 centimeters in diameter. Add a spoonful of the meat and close the patty, shape into an oval.

    Heat some oil in a saucepan.

    Cover the patty with the beaten egg, flour, and a pinch of black pepper. Fry in the hot oil until golden brown.
