- 6 large roma tomatoes
- 6 cup eggplant mash, see attached recipe
- 1/2 cup sharp cheddar cheese grated
Directions

1Preheat oven 425 Fahrenheit

2Wash tomatoes.

3Cut in half lengthways.

4Scoop out the inside of tomatoes, and add to eggplant mash.

5Fill the hollowed out tomatoes with the eggplant mash and tomato mixture.

6Add cheese on top bake for 35 -40 minutes.

7Let sit 5 minutes serve, hope you enjoy!
