Stuffed roma tomatoes

  • 6 large roma tomatoes
  • 6 cup eggplant mash, see attached recipe
  • 1/2 cup sharp cheddar cheese grated

Directions

    Preheat oven 425 Fahrenheit

    Wash tomatoes.

    Cut in half lengthways.
  4. 4
    Scoop out the inside of tomatoes, and add to eggplant mash.
  5. 5
    Fill the hollowed out tomatoes with the eggplant mash and tomato mixture.

    Add cheese on top bake for 35 -40 minutes.

    Let sit 5 minutes serve, hope you enjoy!
