- 2 lb. sole fillet
- 2 oz. butter
- 1/3 c. carrots, shredded
- 8 slices white bread
- 1/2 c. pimentos, minced
- 2 Tbsp. parsley
- 1/4 c. chicken broth
- salt and pepper
Directions

1Cut fillet into 6 pieces. Mix melted butter with remaining ingredients. Divide between fillets and roll up.

2Secure with toothpick.

3Put into baking dish. Brush with melted butter.

4Bake at 375° for 30 minutes.
