Stuffed Squash

- 6 medium squash
- 3 Tbsp. butter
- 2 eggs, beaten
- salt and pepper to taste
- 1 c. Pepperidge Farm stuffing mix
- onion, chopped
- 1/4 c. evaporated milk
- 1 c. or more Cheddar cheese, grated
Directions

1Cut off each end of squash; boil whole until tender.

2After cooled, cut squash lengthwise, scoop out inside and save.

3Saute onion in butter until tender; mix together with all remaining ingredients, except squash shells.

4Put mixture back into squash shells.

5Bake, covered, at 350° for 30 to 45 minutes, until golden brown.

6Serves 6 to 8.
