Stuffed Squash

  • 6 medium squash
  • 3 Tbsp. butter
  • 2 eggs, beaten
  • salt and pepper to taste
  • 1 c. Pepperidge Farm stuffing mix
  • onion, chopped
  • 1/4 c. evaporated milk
  • 1 c. or more Cheddar cheese, grated

Directions

    Cut off each end of squash; boil whole until tender.

    After cooled, cut squash lengthwise, scoop out inside and save.

    Saute onion in butter until tender; mix together with all remaining ingredients, except squash shells.

    Put mixture back into squash shells.

    Bake, covered, at 350° for 30 to 45 minutes, until golden brown.

    Serves 6 to 8.
