Stuffed Squash

  • 4 medium yellow squash
  • 1/4 c. butter or margarine
  • 1/4 c. chopped onion
  • 1 c. finely diced cooked ham
  • 2 Tbsp. grated Parmesan cheese
  • 26 Ritz crackers, coarsely crushed (about 1 1/2 c.)
  • 1/2 tsp. seasoned salt
  • 3 Tbsp. snipped parsley
  • 1/2 c. water

Directions

    Cut squash in half lengthwise; scoop out the center and chop. Cook squash halves in lightly salted water in covered large pot about 15 minutes or until almost tender; drain.

    In a skillet melt butter or margarine; add onion and ham and saute until onion is golden.

    Stir in chopped squash and cook until tender.

    Stir in next 3 ingredients and 2 tablespoons parsley.

    Spoon into squash halves.

    Place in a large shallow pan.

    Pour water over bottom of pan.

    Bake uncovered in a preheated 400° oven for 10 to 15 minutes or until heated through.

    Sprinkle remaining parsley.
