  • 2 medium size yellow squash
  • 1/2 c. chopped fresh mushrooms
  • 3 Tbsp. chopped green onions
  • 2 Tbsp. chopped green peppers
  • 1/4 c. frozen egg substitute, thawed
  • 2 Tbsp. fine dry bread crumbs
  • 1 Tbsp. chopped ripe olives
  • 1 1/2 tsp. fresh basil
  • 1 1/2 tsp. fresh oregano
  • 1 1/2 tsp. fresh thyme
  • 1/4 tsp. ground pepper
  • 1/4 c. shredded Mozzarella cheese

    Prick squash several times with a fork.

    Bake at 325° for 25 minutes or until tender; cool slightly.

    Cut squash in half lengthwise.

    Scoop out pulp, leaving 1/4-inch shells.

    Set shells aside.

    Drain pulp; mash.
