- 2 medium size yellow squash
- 1/2 c. chopped fresh mushrooms
- 3 Tbsp. chopped green onions
- 2 Tbsp. chopped green peppers
- 1/4 c. frozen egg substitute, thawed
- 2 Tbsp. fine dry bread crumbs
- 1 Tbsp. chopped ripe olives
- 1 1/2 tsp. fresh basil
- 1 1/2 tsp. fresh oregano
- 1 1/2 tsp. fresh thyme
- 1/4 tsp. ground pepper
- 1/4 c. shredded Mozzarella cheese
Directions

1Prick squash several times with a fork.

2Bake at 325° for 25 minutes or until tender; cool slightly.

3Cut squash in half lengthwise.

4Scoop out pulp, leaving 1/4-inch shells.

5Set shells aside.

6Drain pulp; mash.
