- 6 squid
- olive oil
- 1 onion diced
- 1/2 red pepper
- 6 3/4 tablespoons white wine
- 1 tomato diced
- 3 tablespoons tomato paste
- ground black pepper salt
- 3 tablespoons rice
Directions

1Remove squid skin, clean squid thoroughly and rinse in plenty of cold water.

2Drain well.

3Chop tentacles and set aside.

4Heat a little olive oil in a pan and saute onion.

5Add diced bacon and saute briefly.

6Deglaze pan with wine and cook until liquid evaporates.

7Add diced tomato.

8Add chopped tentacles and cook for about 5 minutes.

9Add tomato paste and season with salt and pepper.

10Add rice and cook until rice is half-cooked.

11Fill squid with rice mixture, secure and close ends with a toothpick.

12Add a little olive oil to hot pan and return stuffed squid to pan.

13Cook over low heat until rice is tender.

14Serve immediately.
