Stuffed Summer Squash

Ingredients

  • 6 firm yellow crookneck squash
  • 1 onion, chopped
  • 6 Tbsp. cracker crumbs
  • 1/3 c. Cheddar cheese, grated
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. sugar
  • 1/4 c. mayonnaise
  • 1 egg, beaten
  • 1 Tbsp. oleo

Directions

    Simmer squash in boiling salted water until tender for about 20 minutes.

    Slice in half lengthwise and scoop out insides, leaving shells intact.

    Drain and mash squash meat with remaining ingredients and stuff into squash shells.

    Sprinkle with additional cheese; bake at 350° for 30 minutes.
