Stuffed Summer Squash

- 6 firm yellow crookneck squash
- 1 onion, chopped
- 6 Tbsp. cracker crumbs
- 1/3 c. Cheddar cheese, grated
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. sugar
- 1/4 c. mayonnaise
- 1 egg, beaten
- 1 Tbsp. oleo
Directions

1Simmer squash in boiling salted water until tender for about 20 minutes.

2Slice in half lengthwise and scoop out insides, leaving shells intact.

3Drain and mash squash meat with remaining ingredients and stuff into squash shells.

4Sprinkle with additional cheese; bake at 350° for 30 minutes.
