Stuffed Tenderloin

Ingredients
- 1 onion, diced
- 2 Tbsp. olive oil
- 1/2 lb. spinach, chopped
- salt and pepper to taste
- 1/3 c. Parmesan cheese, shredded
- 3 Tbsp. tomatoes in oil, drained and chopped or chopped, fresh tomatoes to taste
- 1 (4 lb.) beef tenderloin
Directions

1Saute onion over medium heat until tender.

2Add spinach, salt and pepper; saute until spinach wilts.

3Stir in cheese and tomatoes.

4Cut tenderloin lengthwise down center.

5(Do not cut completely through to the bottom.)

6Lay flat and spoon spinach mixture down center of tenderloin.

7Secure with string. Tenderloin won't close completely.

8Place cut side up in a pan/casserole dish.

9Cover with foil.

10Bake at 425° for 50 minutes.
