Ingredients
- 2 pkg. frozen, chopped spinach, barely cooked and well-drained
- 1 stick melted butter
- 3/4 c. fine bread crumbs, seasoned
- 1 large onion, finely chopped
- 1/4 tsp. pepper
- 2 eggs
- 1/4 c. Parmesan cheese
- 8 small tomatoes
- salt to taste
- 3 to 4 drops Tabasco
- dash of thyme and Accent
Directions

1Lightly saute onion and butter.

2Mix all ingredients together, except tomatoes.

3Hollow out tomatoes, salt the inside of tomatoes and let drain upside down for about 1/2 hour.

4Place the spinach mixture inside tomatoes and mound on top.

5Bake at 350° for approximately 20 to 25 minutes.

6Do not overcook.

7Mixture can be made ahead.
