Stuffed Tomatoes

Ingredients

  • 2 pkg. frozen, chopped spinach, barely cooked and well-drained
  • 1 stick melted butter
  • 3/4 c. fine bread crumbs, seasoned
  • 1 large onion, finely chopped
  • 1/4 tsp. pepper
  • 2 eggs
  • 1/4 c. Parmesan cheese
  • 8 small tomatoes
  • salt to taste
  • 3 to 4 drops Tabasco
  • dash of thyme and Accent

Directions

    Lightly saute onion and butter.

    Mix all ingredients together, except tomatoes.

    Hollow out tomatoes, salt the inside of tomatoes and let drain upside down for about 1/2 hour.

    Place the spinach mixture inside tomatoes and mound on top.

    Bake at 350° for approximately 20 to 25 minutes.

    Do not overcook.

    Mixture can be made ahead.
