  • 1 1/8 cups mascarpone cheese
  • 1 onion small, finely chopped
  • 1 lemon
  • 1 handful walnuts ground, plus another handful for garnish
  • 10 tomatoes cocktail
  • salt
  • ground black pepper

Directions

    Mix the mascarpone cheese, onion, lemon juice, lemon zest, and ground walnuts in a small bowl.

    Cut a thin slice off the bottom of each tomato, and a slice from the top.

    Remove the filling of each tomato using a spoon.

    Stuff the tomatoes with the mascarpone cheese mixture, garnish with a walnut, put the top back in place, and serve.
