Stuffed Yellow Squash

  • 1 lb. large squash
  • 3 Tbsp. mayonnaise
  • 1/2 c. crumbs (saltine or bread)
  • 1/2 tsp. Cavender's or seasoned salt
  • 1/2 c. grated Cheddar cheese
  • bacon bits or crumbled bacon (optional)

Directions

    Boil squash whole until tender.

    Cut in half when cool. Remove pulp.

    Save and squeeze.

    Lay cut halves, emptied, on flat pan.

    Mix pulp and all other ingredients together, except for cheese and bacon.

    Put mixture in halves.

    Top with cheese and bacon.

    Heat until hot.

    Serves 4 to 6.
