Stuffed Zucchini

- 4 to 5 zucchini
- 1 c. bread crumbs
- 1 c. shredded cheese
- 1/2 c. chopped onion
- 2 eggs (uncooked)
- salt and pepper to taste
Directions

1Parboil the zucchini.

2Cut each zucchini in half lengthwise. Scoop out seeds and discard.

3Scoop out zucchini meat and dice. Mix zucchini with bread crumbs, shredded cheese, onion and eggs. Season to taste with salt and pepper.

4Stuff zucchini shells with this mixture.

5Top with shredded cheese or Parmesan cheese.

6Bake at 350° for 1/2 hour, until golden brown on top.
