  • 1 medium (8 to 10-inch) zucchini
  • 1 Tbsp. corn oil
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 2 Tbsp. chopped parsley or 2 tsp. dried
  • 1/2 tsp. oregano leaves, crumbled
  • 1/4 tsp. basil, crumbled
  • pepper to taste
  • 2 Tbsp. tomato sauce
  • 2/3 c. fine bread crumbs
  • 2 Tbsp. melted margarine
  • Parmesan cheese

    Saute beef and onion in oil; drain fat. Add rest of ingredients except margarine and cheese. Mix in pulp; pile into scooped out centers.
