Stuffed Zucchini

  • 4 medium zucchini
  • 1 c. shredded cheese (your choice)
  • 1 egg, beaten
  • 1 c. rice (already cooked)
  • 2 Tbsp. chopped onion
  • 2 Tbsp. fine bread crumbs
  • 2 slices cooked bacon, crumbled
  • salt

Directions

    Parboil zucchini about 7 minutes.

    Cool.

    Cut in half.

    Scoop out pulp.

    Chop pulp.

    Mix with cheese (reserving 1/2 cup), eggs, rice, onion, bread crumbs and salt.

    Stuff shells with mixture. Sprinkle with bacon.

    Bake in greased baking dish at 350° for 20 to 25 minutes.

    Top with cheese the last few minutes of baking.
