- 4 medium zucchini
- 1 c. shredded cheese (your choice)
- 1 egg, beaten
- 1 c. rice (already cooked)
- 2 Tbsp. chopped onion
- 2 Tbsp. fine bread crumbs
- 2 slices cooked bacon, crumbled
- salt
Directions

1Parboil zucchini about 7 minutes.

2Cool.

3Cut in half.

4Scoop out pulp.

5Chop pulp.

6Mix with cheese (reserving 1/2 cup), eggs, rice, onion, bread crumbs and salt.

7Stuff shells with mixture. Sprinkle with bacon.

8Bake in greased baking dish at 350° for 20 to 25 minutes.

9Top with cheese the last few minutes of baking.
