- 2 tablespoons yeast, active dry dry; or 2 packages
- 4 1/4 cups flour, all-purpose sifted or as much as 4 1/2 cups
- 1 1/2 cup water tepid
- 3 tablespoons sugar
- 1 tablespoon salt
Directions

1Combine water, sugar and salt.

2Add yeast to mixture.

3Beat at low speed for 1/2 minute, scraping sides.

4Beat 3 minutes on high speed.

5By hand, stir in enough remaining flour to make a moderately stiff dough.

6Turn out on floured board and knead until smooth.

7(5-8 min.)

8Let rest 15 minutes.

9Cut into 12 portions.

10Shape into smooth balls.

11With floured finger, punch a hole in center and enlarge the hole working each into a uniform shape.

12Let rise 20 minutes.

13In large kettle put one gallon water and one tablespoon sugar.

14Bring to boil, then reduce to a simmer.

15Drop 4 to 5 bagels in at a time cooking 3 1/2 minutes on each side for a total of seven minutes.

16Drain.

17Place on ungreased sheet.

18Bake at 375 30 to 35 minutes.
