Stuffed Zucchini

- 1 1/2 lb. zucchini (about 3)
- 1 medium onion, chopped
- 1/4 c. margarine or butter
- 1 small green pepper, chopped
- 1 c. boiling water
- 1/2 tsp. salt
- 1 (2 oz.) jar pimento, drained
- 1 c. herb seasoned stuffing mix
- 1/2 c. Mozzarella, shredded
Directions

1Use enough water and salt in proportion given to cook the zucchini, about 8 to 10 minutes or until tender.

2Cool slightly. Cut each in half lengthwise.

3Spoon out

4pulp and chop coarsely. Place cut side up in ungreased baking dish.

5Cook and stir onion in margarine until tender.

6Add chopped pulp, green pepper, pimento and stuffing mix.

7Fill the zucchini with the mix. Sprinkle each with 1 tablespoon cheese.

8Bake, uncovered, at 350° until hot and cheese is melted, 25 to 30 minutes.
