- 6 medium zucchini
- 3 c. soft breadcrumbs (about 6 slices), cubed
- 1/2 c. grated Parmesan cheese
- 1 small onion, minced
- 3 Tbsp. chopped parsley
- 1 tsp. salt
- dash of pepper
- 2 eggs, beaten
- 1 lb. bulk Italian sausage
- 4 oz. Mozzarella cheese
- spaghetti sauce (homemade or store brand)
Directions

1Brown sausage.

2Wash zucchini; cut off ends.

3Do not peel. Cook in boiling, salted water for 5 minutes.

4Halve lengthwise and remove pulp with spoon.

5Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs.

6Fill zucchini shells and top with sauce and Mozzarella cheese.

7Bake at 350° for 30 minutes.
