- 3 medium zucchini
- 2 Tbsp. butter
- 1 c. chopped mushrooms
- 2 Tbsp. flour
- 1/4 tsp. oregano
- 1 c. shredded Monterey Jack
- 2 Tbsp. chopped pimento
- 1/4 c. grated Parmesan
Directions

1Cook whole zucchini in boiling water for almost 10 minutes, or until tender; drain.

2Cut in half lengthwise.

3Scoop out centers, leaving a 1/4-inch shell.

4Chop center portion; set aside.

5Saute mushrooms and reserve zucchini.

6Preheat broiler.

7Fill shells, using approximately 1/4 cup filling; sprinkle with cheese.

8Broil for 3 to 5 minutes.
