- 3 medium zucchini
- 1/4 c. chopped onion
- 3/4 c. chopped tomato
- 3/4 c. fresh sliced mushrooms
- 1/8 tsp. pepper
- 1 1/4 tsp. dried Italian seasoning
- 1 Tbsp. Parmesan cheese (grated)
Directions

1Place zucchini in a steamer over boiling water.

2Cover and steam 10 to 12 minutes.

3Cut zucchini in half lengthwise; remove pulp, leaving 1/4 inch thick shells.

4Dice pulp and set aside; save zucchini shells.

5Coat a nonstick skillet with cooking spray; place over medium heat until hot.

6Add onions and mushrooms; saute until tender.

7Stir in diced zucchini pulp, tomato, pepper and Italian seasoning.

8Cook until thoroughly heated, stirring often.

9Spoon zucchini mixture evenly into shells; sprinkle with cheese.

10Arrange stuffed shells in a 13 x 9 x 2-inch baking pan.

11Bake at 350° for 25 minutes, or until heated through.
