- 1 c. low-fat Ricotta cheese
- 1/2 c. unsweetened applesauce
- 1/2 c. Fruit Sweet
- 2 Tbsp. oil
- 1 egg
- 2 tsp. vanilla
- 1 1/4 c. flour
- 1/2 c. wheat germ
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1 c. shredded zucchini or carrots or combination of both
- 1/4 c. chopped apple
- 1/4 c. raisins
- 1/4 c. sunflower seeds (optional)
Directions

1In large bowl cream Ricotta, applesauce, fruit sweetener and oil.

2Stir in egg and vanilla.

3In separate bowl combine flour, wheat germ, soda, baking powder, nutmeg and allspice.

4Add to batter; blend well.

5Add zucchini, apples, raisins and sunflower seeds.

6Spoon into 15 muffin cups which have been sprayed with nonstick coating.

7Bake 20 to 25 minutes (or until firm and golden brown) at 350°.

8Makes 15 muffins.
