Ingredients
- 1 (2-lb.) boned, rolled rib roast
- 1/4 c. all-purpose flour
- 2 c. water or low sodium beef broth
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 tsp. dried parsley
Directions

1Preheat oven to 450 degrees.

2Place roast in a roasting pan. Roast for 15 minutes, reduce oven to 400 degrees.

3Continue roasting for about 20 minutes per pound for medium.

4Remove roast from oven, place on serving platter, keep warm.

5Blend flour into pan juices, cook over medium heat, scraping pan to loosen brown bits, for about 4-5 minutes.

6Gradually stir in water or beef broth.

7Cook over medium-high heat stirring continually, until mixture boils.

8Add salt, pepper and parsley.

9Slice roast and serve with pan gravy.

10Serves four.
