  • 2 beets sugar
  • 1 1/2 cups chickpea cooked
  • 2 garlic cloves
  • lemon juice to taste
  • 1 tablespoon ground cumin
  • olive oil to taste

Directions

    Cook the beets, unpeeled, and boil until very tender.

    Remove from heat, drain, and let cool slightly. Peel, and cut in chunks.

    In a blender, place the beets, chick-peas, garlic, lemon juice, and cumin. Blend to a puree.

    Gradually add, if necessary, a little warm water and olive oil, to obtain the desired consistency.
