  • 2 sticks Butter
  • 3 cups Sugar
  • 1/2 teaspoons Salt
  • 1 whole Egg
  • 1-1/3 cup Soy Milk Or Regular Milk
  • 2 teaspoons Vanilla
  • 3 cups Flour
  • 3 teaspoons Baking Powder

Directions

    Preheat oven to 350 degrees. Grease and flour a 12-cup muffin pan or use muffin liners.

    In a large bowl, beat butter, sugar, and salt until well mixed. Add egg, milk, and vanilla. Mix well. Add flour 1 cup at a time, mixing after each cup. Mix in baking powder.

    Pour 1/4 cup of the mixture into each muffin cup. Bake for 25 minutes. Let cool for 10 minutes. Frost with sugar cookie icing.
